What's your Favorite dish

As you continue your culinary journey, you will probably find things that you really enjoy making. It can be as simple as that favorite dip for parties or Chicken Curry if your more adventurous.

There are many reasons we have favorite things to cook. Some are our favorite things to eat. Others are easy but still delicious. Some dishes use a lot of our favorite ingredient, like mushrooms. There are those that similar other favorites, so they are familiar with a few changes.

Personally, I enjoy cooking Southeast Asian dishes in general. Most of the preparation steps are the same. The main difference lies in the ingredients for the sauces, but even these have many things in common. In Chinese sauces you will often find Oyster Sauce combined with Soy Sauce. But in Thai cuisine, the sauce would use Fish Sauce in place of the Soy. This is also true in many cases, for Vietnamese recipes.

But I digress. There are favorites because they are comfort food or only use one pot. But what is your absolute favorite to cook? Don’t be shy, we all have one. Often it is one that brings together characteristics of our top 5 or 10 recipes. It’s easy, it’s comforting and only uses two pots or pans to make.

My personal favorite is Spaghetti all’Olio e Aglio. It only needs one pot and one pan. It’s pasta, so it definitely has a note of comfort food, it has two of my favorite ingredients: garlic and parmesan cheese. Plus Kalamatta Olives and some heat from red pepper flakes. And its easy to make. The hardest part is mining the garlic, which is fairly easy.



“Ok, great, but how does this help me?” As I discussed in my Favorite Ingredient post, it helps to know what we most like about cooking. With the crazy pace of life that we have now, we don’t always take time out to give these things some thought. But identifying what we like can enhance the pleasure of cooking, or anything else that we put time into in our lives. It gives a greater appreciation and sense of fulfillment.
